NOVELLO Extra Virgin Olive Oil

The justpugliafactory New Oil called NOVELLO is an absolutely 100% Italian

oil, produced in LIMITED EDITION, dedicated to the gourmets of quality

Olive Oil and TASTY CUISINE.

The varieties of olives used are Cellina di Nardò, Coratina, Ogliarola

 and Leccina 

The NOVELLO is basically the first oil of the first olives of the

new harvest, freshly pressed and immediately bottled to retain its

precious drops and lively fragrance. The new oil is NOT FILTERED -

NOT DECANTED.

What is it about ?

The first olives are harvested between mid-October and latest end of

November. The COLLECTION takes place from the early  morning, the

need to be VERAISED (green pink).

Following the harvest, the olives are transported to the oil mill in order to

be cold pressed within 5 hours. The first pressing of these VERAISED

OLIVES to a high phenolic concentration are accentuated.

The unfiltered, not decanted New Oil, as soon as it is pressed, contains

a  greater quantity of vegetable particles, and therefore a greater 

quantity of polyphenols much more than the usual Olive Oils.

Polyphenols are antioxidant substances beneficial for health, therefore

NOVELLO has this virtue.

The justpugliafactory NOVELLO is bottled in special GLASS BOTTLES, each

one different from the other, making it a unique and PRECIOUS

PRODUCT. For its fruity and intense flavor, ideal for dressing

bruschetta, friselle, as well as vegetables and enriching the taste of

white and red meats.
