Food combinations
Starter with croutons with “lardo di colonnata” (ointment on the crouton, not on the lard). Raw on sliced artichokes and beef carpaccio. During summer on a succulent grilled meat. During winter in a warm black cabbage soup, its aromas are unleashed. It is the perfect match to go with a roast leg of lamb with potatoes.
Meaning of mono-cultivar:
When we speak of mono-varietal or mono-cultivar evo oil, we are referring to oil obtained from olives grown from a single, exclusive crop. The term mono-cultivar, in fact, has a Greek root, "monos" meaning unique and "cultivar" referring to the crop. Mono-varietal evo oil is highly prized because, since it comes from a single crop, it is not produced in large quantities and, above all, is greatly affected by the weather conditions of the year.
